The world is shaking off
its winter slumber and
spring is in the air! Lamb
is something I don’t tend
to eat that often, so when
I do, I like to make the
most of it. And with
MINCE
Lamb mince is so versatile and ideal for families of all
sizes – it’s easy to double recipes depending on how
many you’re feeding. Due to the fatty nature of lamb
mince, it’s great with bold flavours.

3 MINT SAUCE
ALTERNATIVES
These punchy green offerings from
around the world bring out the best in
lamb. Go on, give mint sauce a rest!
Chimichurri
This Argentinian sauce can also be used as
a marinade. Blitz fresh parsley, oregano and
garlic in a food processor (or bash with a
pestle and mortar). Stir in olive oil, red wine
vinegar and chilli flakes; season to taste.
Salsa verde
To make this Italian sauce, finely chop
fresh basil, parsley and chives. Stir through
finely chopped shallot, garlic, capers and
anchovies (if you like), then add Dijon
mustard, lemon zest and juice, and enough
olive oil to make a sauce.
Zhoug
Originally from Yemen, this fragrant sauce
has a bright chilli kick. Blitz garlic, fresh
coriander, green chillies and ground cumin
in a food processor. Add lemon juice and
olive oil to form a coarse sauce; season.

SHANK
A lamb shank is one of the most iconic cuts. It makes a
perfect single serve and really is special when cooked
right – a Sunday lunch to die for.
TRY it slow-cooked with plenty of rosemary and mint,
served with mash and gravy.
