CHICKEN SKEWERS
Scratch cooking perfect for the BBQ!
INGREDIENTS
• 12 chicken thighs, trimmed • pitta breads
& cut into 3cm strips
• 200ml coconut milk
• 2 cloves garlic, crushed
• 2 green peppers, cut into
chunks
2cm fresh ginger, finely
grated
• 2 red onions, quartered
• 3 spring onions
• 1 tsp chilli powder
• 80g coriander leaves
• salt for seasoning
1 lime, zest & juice
• 100ml natural yogurt
• 1 red pepper

1. Preheat the barbecue to medium heat.

2. Place the chicken, coconut milk, lime zest, ginger,
garlic and chilli powder in a large bowl. Mix to
combine. Cover and refrigerate for one hour.
3. Prepare the coriander dressing: In a mixing bowl,
combine the yogurt, coriander leaves, spring onions
and lime juice. Blend using a handheld blender until
smooth.
4. Thread the chicken, onions and green peppers
onto 12-14 skewers.
5. Cook the chicken skewers for 3-5 mins on each
side or until lightly charred and cooked through.
6. Warm the pitta bread over indirect heat on the
barbecue for two mins.
