INGREDIENTS
• 4 Moy Park chicken
breast
1 yellow pepper
170g tomatoes
• olive oil
• 2 courgettes
2 red onions
green pesto
1 red pepper

1. Preheat the oven to 200°C/180°C/Gas 6
fan oven.
2. Prepare the veg, cut courgettes no more
than 1/2 inch thick, halve tomatoes
and slice peppers.
3. Spread the courgettes, onions, peppers
and tomatoes in a shallow roasting tin and
spread around tin. Season with salt and
ground black pepper.

4. Slash the flesh of each chicken breast 3-4
times using a sharp knife, then lay the
chicken on top of the vegetables.
5. Mix the olive oil and pesto together
6. Evenly spread olive oil mix and pesto over
the chicken breast.

7. Season again with salt and pepper.

8. Cover the tin with foil and cook for 30
minutes.
9. Remove the foil from the tin. Return to the
oven and cook for a further 10 minutes
SERVE WITH
until the vegetables are juicy and look
tempting to eat and the chicken is cooked
through (the juices should run clear when
pierced with a skewer).
