1 pinch of salt
• 1 vanilla pod, seeds scraped
• 500g strawberries
500ml Strathroy double
cream (well chilled)
• 4 tbsp icing sugar

1. Preheat oven to 110°C and line a baking tray with grease
proof paper.
2. Whisk the eggs whites to a stiff peak.
3. Add your sugar. As you whisk, gradually let the
into the whites little by little so that, by the end of whisking,
you have stiff whites.
4. Use a spatula to spread the whipped whites over the tray.
5. For an Eton mess, the meringue will be crushed, so the shape
is not too important.
6. Once fully spread, transfer to the oven to dry out and crisp.
This can take 1 hour but check it after the first 45 minutes
depending on your oven.
You can remove the meringue when it sounds hollow and
brittle when you tap it.
7. Whisk the cream until lightly whipped.
8. I like to puree 100g strawberries and 1 tbsp icing sugar for
some strawberry sauce to drizzle on top.
9. Add half the strawberries to the cream in a large bowl and
