swapping ice cream for something a little lighter.
Peach, passion fruit and
raspberry froyo cake
Strawberries
SERVES 8 PREP 15 MINS + FREEZING
for
BITE
1. Line a 20cm tin. Using shortbread for crunch,
blitz 320g into crumbs and mix through 60g melted
Mini strawberry
and white choc cubes
butter. Press into the tin and freeze for 10 minutes.
2. For the filling, use 3 tinned peach halves
for fruitiness and blitz with 1 tbsp syrup. Add
Sweetness with 300ml custard and 4 x 150ml
Passion Fruit and Peach Yoghurts for creaminess,

whizzing together until smooth.
3. Pour the filling over the base and freeze for at
least 6 hours. Remove 15 minutes before serving,
garnishing with extra peach and raspberries.

an ice cube tray. Spoon in the yoghurt
to fill the tray and freeze for 5 hours,

3. Remove the tray from the freezer
and leave to soften for 10 minutes,

until the cubes easily slide out of the
tray. Top with a drizzle of melted white
chocolate for richness and, if you like,
sprinkles for crunch.
MAKES 12 PREP 10 MINS + FREEZING

milk for stickiness and mix with 2 x 450g
Coconut Greek-style Yoghurt for creaminess.
2. Add sweetness with 300ml double cream,
mixing until everything is combined.
3. Line a 1.51 freezer-proof tub with cling film
and pour in the mixture. Freeze overnight, or
