YOUR SALADS
Whizz leaves
into a smoothie
A little wilting won't
make a difference to
the flavour! Peppery watercress
works well with rich avocado - or try
it in this zingy blend with pineapple,
coconut water, lime and ginger.
What else can you do with
salad leaves that are still
within their use-by date but
looking a bit tired**? Try
our clever hacks and hints!
PLUNGE wilted salad into
a bowl of ice-cold water,
then set aside for 5-10 mins
- this should help to bring
it back to life. Drain or spin
to dry, then serve as usual.
GRIDDLE heads of Little
Gem lettuces (cut into
quarters lengthways first)
until lightly charred, to add
a delicate smoky note to the
punchy flavours of a classic
chicken Caesar salad.

Stir leftover leaves
through hot pasta for
a tasty budget dish
Try this with rocket, spinach
or lettuce (shred larger leaves) to add
flavour and texture to creamy sauces.
ROLL larger leaves, such as
Iceberg, around sandwich
fillings, instead of bread or
tortillas, to make wraps - or
use them to hold a no-bun
burger together. Great if
you're trying to cut down
on starchy carbs.
