created for kids, by kids. This issue,
11-year-old Lottie shows us how to make her
veggie nachos, which are topped with a tangy
salsa of tomatoes, courgette, aubergine, peppers
and sweetcorn. Lottie was inspired by the
vegetable wraps her mum and dad make, and
thought it would be a brilliant idea to load
crunchy tortillas with colourful veg for a tasty
meal the whole family can enjoy. The results
are amazing! We certainly have a kitchen
superstar in the making...

Lottie says: 'My parents love to make
meals from scratch, so l've been into
cooking ever since I was a baby. There's a
photo of me stirring the Christmas cake when
I was about six months old! I look in books and
magazines for recipes, and love Nadiya Hussain.
Recently, I planned and cooked a three-course meal of
fish goujons, mozzarella-stuffed chicken and homemade
brownies for my family. I'm also learning about nutrition
at school, which is why I think these nachos are great. The
recipe makes vegetables so tasty, kids will want to eat them!'
